That seems like an INSANE thing to do with an airplane!
Project Cars has a nice (heh) engine, in that I could see how Slightly Mad Studios could crank this one out pretty well with the tech they have. PCars1 sort of feel a bit flat for me at the end, due to AMD driver issues and the quick announce of PCars2, but at least it was actually a crowd funded project that (a) got finished (b) gave back some profit to the backers. Visually it is still stunning, and that would work well for these Red Bull flip races.
