That’s just basic flight dynamics in a statically stable aircraft without automatic trim or a full-blown digital FCS.
If you let go of the stick after giving a pitch input while the aircraft is still experiencing its transient response to your control input then all you’ve really done is induced a disturbance. The aerodynamic forces on the aircraft are going to push it back towards straight and level flight.
