That’s a Swabian expression of anger which literally says “I could ride off on a pig!”. Roughly analogous to “this drives me nuts!”.
I know the policeman is from Hessia, not Swabia (you can tell from the car’s license plate which is from Wiesbaden, the capital of Hessia) but it fits nicely.
