At the cost of looking foolish - growing up with grandmothers (love you both you absolute gems, peace be with you
) that had to make do during the second world war, I was taught to eat almost everything, as many of their recipes came from literally eating anything barely edible but cooked long enough and with enough spices to make it pleasant- or pleasant adjacent.
So, while I still cannot fathom to eat brain soup (oh boy do I have a story about it) or other specific animal bits, stuff like this chitterlings I would totally try.
CAVEAT : I do not like to be in the kitchen as they cook as it is admittedly some of the foulest smells everā¦
I even got to admit haggis is definitely not as bad as itās portrayed.
( except surstrƶmming, that is literally the worst of the worst- personally. No offense meant)
I guess it is like a lot of āfoodā. If you donāt see it getting prepared or cooked, and it tastes, but more importantly smells good, it is fine. And as you say, if you have enough condiments (Tabasco FTW), even a āMREā can be made edible.
I might have posted this story elsewhere here? But eating in a Navy mess one time. Lashings of food and much more variety for breakfast than you would ever see in an Army mess.

One of the other guys, couldnāt help himself and told her that they werenāt chicken nuggets but crumbed (sheep) brains.
Poor girl. She nearly made it outside before bringing them up.

LOL! I did renege on not being hungry, and went to try one. It was so much better than I was hoping, that I gave up and had a few.
