I think the main difference between the two is that with the Hornet you have to stay ahead of the power curve, it tends to sink.
The Tomcat on the other hand tends to float.
I find myself catching a lot of #4 wires (or having bolters because I missed all four wires) and no #1 wires in the Tomcat while in the Hornet I rarely have those, but I have quite a number of #1 wire traps.

Ok, that’s not actually a surprise since I have posted a tiny snippet of video before.
Anyway, lately I goofed around a bit with OBS Studio and Shotcut and made a few videos. None of them are listed on YT yet but I thought I’d share the links and have y’all take a look. Nothing too fancy yet, just testing stuff. Enjoy!
Here’s the first one. A tad boring. Just taking off with a Hornet and hitting the tanker. Sloppy flying. “Action” begins at 6 minutes or so.
It was mainly a test to see whether the recording worked with decent frame rates, and how big the files were.
And here is my first real video.
This time I did some tests with Shotcut, just, you know, cutting stuff. A few transitions. Captions. That kind of stuff.
I call for an Emergency Meeting of the Exalted Mudspike Supreme Membership Council (and drinking club) to address this new and disturbing proclamation!
…yeah. I actually didn’t use my usual procedures.
But then… I thought I didn’t overspeed, I wasn’t over 360 knots.

I doubt that I will become a regular DCS video creator (mainly because everything I’d like to show is already done by lots of other people) but I intend to make a video now and then, and then your advice will surely come in handy!
Edit: in fact my biggest problem for that video was that the tracks in DCS don’t work very reliably (although they have been getting better) so I had to play the track several times (and without timewarp) to get some scenes right. Sometimes when I play that track I suddenly get shot down by MANPADS although that didn’t happen when I recorded it.
